Today we are enjoying another hour of warm sparkling sunshine in Amman, Jordan! Power to to people of Jordan for enduring their COLD winter weather here. Its somewhat different as far as the heating systems in our homes here in Jordan. Most homes don't have central air or heat which is very unfortunate for the people. I can't imagine every winter having to endure the cold winter days & nights without central heat for your entire life. It really gave me as a Westerner a new appreciation for the warm heated homes in the United States. I really had no CLUE that winters could be so long & cold without central heat. I have a new appreciation for sunshine! Most homes in Jordan have marble floors & the homes are made of concrete so its literally like an icebox. Most homes use space heaters and some have air-conditioner units that can also produce heat in the winter time but they really don't work all that well to keep the space warm and your electric bill basically ten times as much as you would pay in the summer time. Maybe because I'm not use to the winters here in Jordan although I am from Minnesnowta lol Minnesota the capital of snow and where the state bird is the mosquito I will definitely be more prepared this next winter Inshalla/ (If God wishes for me) as they often say in the Arabic country!
Today I prepared these lovely red tomatoes by roasting them in the oven with olive oil, garlic, green olives, and Italian seasonings. I roasted the tomatoes and some garlic and made a homemade pasta sauce. This homemade sauce had such a rich robust flavor with the roasted garlic and I almost forgot I even through in a few pieces of brine lemon pieces bone appetite! I hope everyone has a weekend full of laughter, adventure, food, and sounds of Spring!
